Just threw this together last night after looking at a few recipes online and it was wonderful.
Veg List:
Half Head Cauliflower chopped into pieces
Small head broccoli chopped into pieces
Green Pepper quartered then sliced into thin strips
2 Carrots
1 Med Large Yellow Onion diced
2 Small Potatoes peeled and cubed
6 Garlic Cloves Chopped
Green Chilies Chopped (I used three seranos)
Spices:
2 T Curry Powder
1 t Coriander Powder
2 t Turmeric
2" Piece of ginger grated or chopped up fine
Cinnamon Stick (totally optional, if you have one great)
Other:
1 Cup Vegetable Broth (cubes are great for this)
1 Can Coconut Milk (14 oz)
1 Can chopped or whole toms (14 oz) with juice. If whole toms chop roughly
1. Get a medium pot on a medium heat and add some oil
2. Add carrots and onions sauté 5 min
3. Add Broccoli, Cauliflower, Green Pepper, Chilies, Ginger, and Garlic sauté 5 min. Broccoli should turn nice and green
4. Add dry spices and stir for a minute (turmeric, coriander, curry powder)
4. Add potato, toms and juice, coconut milk, broth, and cinnamon stick and bring to a boil then lower heat and simmer until vegetables are soft
Serve over rice or eat as-is.
