Spinach Orzo Salad

This is a great cold salad.

Ingredients:

8 oz Orzo (get Whole Wheat if you can find it)
1/4 cup pine nuts
1/2 tsp Red Pepper Flakes (or more if you like it spicier)
1/4 cup EVOO
3 cloves garlic chopped or minced
5 oz Spinach or whatever greens you like. I used Organic Girl's Super Greens.
1 pint Grape Tomatoes (or cherry tomatoes, but grape are more bite-sized)
Salt and Pepper to taste

Boil the Orzo according to package directions in well salted water, drain, but save some of the cooking liquid - maybe 1/4 cup or so.

Saute the EVOO, Pepper Flakes, and Pine Nuts until the pine nuts start turning brown. Then add the garlic, stir and saute for 30 seconds more. Remove from heat, or maybe not. See next comment.

At this point, you can get creative with the greens. You could add them to the oil and saute them down all the way, or you could just toss with the oil off of the heat to wilt them a little. Your choice. Or just add the fresh greens along with all the ingredients in the next step, they will still go a little limp since the pasta and oil are still very warm.

Everything (except the reserved pasta liquid) should go into a very large bowl so that you can stir it up without stuff falling out. Mix it and add salt and pepper to taste. If it is a little to dry you can add some of that reserved pasta cooking water.

Enjoy immediately or put it in the fridge.

This makes enough for 2-3 meals for me.
