Ingredients:
Dressing
- 1/2 heaping cup of good, natural peanut butter. I love Smuckers.
- 2 T Rice Wine Vinegar
- 1/4 Cup Soy Sauce
- 3 T Water
- Juice of 1 Lime
- 1 tsp (or more) of red pepper flakes. I use 1.5 tsp
- 1 T Fresh Ginger or 1 T of the pre packaged Ginger paste
- 1 or 2 cloves of garlic minced
- 1/2 cup of shelled Edamame
- 1/2 bunch of cilantro (if you like it)
Salad:
- 8 oz Asian noodles. Could be Soba, Buckwheat or whatever you like. Even regular linguine would be fine
- 1 Cucumber, seeds removed sliced in half then slices in half-moons
- 1/2 Red Pepper sliced really really thin
Cook the noodles according to package directions in salted water. Drain them, and RINSE them with cold water. Very important to rinse them. Drain.
Make the dressing. If you have pureed ginger or ginger chopped super fine then just put it all in bowl and whisk. If you have solid ginger and garlic then a food processor or blender would be good to use.
Mix everything together and taste then adjust as needed. Serve cold or at room temp.
