Roasted Vegetable Ziti

Veg:
Small Broccoli Head
Large White Onion (1/2 to roast and 1/2 diced for sauce)
Green Pepper
3 Carrots
1 Small Yellow Squash

Rough Chop the veggies (and half of the onion) then toss with olive oil, salt, and pepper and roast until roasted at 450. And, really, you can use whatever veggies you like.

Boil 1 pound of ziti or whatever tube you like.

Dice the white onion and 6 cloves of garlic and sauté the onion until soft with a tsp of red pepper flakes (or more) then the garlic for a minute or two. Pour in 1 28 oz can plus 1 14 oz  can of crushed tomatoes, 1 T Basil, 1 T Oregano, and a tsp of salt. Stir and cook for a few minutes then taste and adjust the seasonings.

Drain the pasta and save a cup of the pasta water.

Mix the sauce, roasted veg, and pasta together. If you are going to refrigerate it after you eat a little of it, then add some pasta water because the noodles will really soak up the sauce in the fridge and the whole dish dries out.
