1/2 Veganaise
4 T Yellow Mustard (I think I only used 3)
2 T White Vinegar
1/2 C Red Onion
1/2 C Celery
Salt, Pepper, Paprika to taste
about 10 red or white potatoes small to medium sized
Chop the potatoes into potato salad size and cook them in boiling water until they are soft about 20 minutes or so.
Spread the potatoes out on a counter or cookie sheet(s) and let them cool completely.
Mix potatoes with all that other stuff and refrigerate for about an hour.
