Dressing Ingredients
1/4 cup tahini
2 T EVOO
1/4 cup nutritional yeast
1 tsp red pepper flakes
2 T water
1 garlic clove minced
Juice of 1 lemon
Salt and Pepper to taste
Whisk all of it in a bowl. If it seems too thick add some water. At this point taste it and add salt and pepper, more EVOO, or more red pepper until you like it.
I'm listing the ingredients that I used, but you don't have to have much more than kale and tomatoes. Like I said above, the dressing is great. I'm also not adding amounts because I don't make a salad that way. I just add until it looks like the right ratio.
Salad Ingredients
Kale, thick stems removed, chopped fine
Cucumber, diced
Cherry Tomatoes (sliced in half)
Walnuts (toasted)
Raisins
Red Onion, diced
Garbanzo Beans
Yellow or Red Bell Pepper
Avocado
Black Olives
Quinoa!
Turmeric if you have it. Great anti-inflamatory. Start with a teaspoon.

I didn't add the following ingredients in mine, but these would be great also: Carrot, hemp seeds, mango, chopped apples.
Toss the salad stuff with the dressing and chill it a while so the flavors can blend.
