I am so hooked on this breakfast.
1 lb Red Skin Potatoes, cubed to about 1 inch
1 Green Pepper, chopped into large pieces
1/2 Large White Onion, chopped into large pieces
EVOO
Moon Dust (spice blend you make)
Moon Dust (this stuff is great and makes a lot more than you need for one serving)
1/4 cup kosher salt
1.5 tsp lemon pepper
2.25 tsp dried thyme
2.25 tsp onion powder
3/4 tsp chili powder
1/2 tsp cayenne
3/4 tsp dried oregano
3/4 tsp dried basil
2 T dried rosemary
3/4 tsp curry powder
1 T cajun spice mix (or just add more onion powder and chili powder)
Preheat oven to 475
Preheat the cookie sheet also. 1 cookie sheet per LB of potatoes.
Mix the potatoes, green bell pepper, and onion in a bowl with the moon dust and the evoo. I don't measure the moon dust. I just keep adding it while I mix until the coating looks just right.
Spill out the mixture onto the preheated cookie sheet. You should hear a little sizzle. Flip the potatoes so that one flat side is flat on the cookie sheet.
Bake at 475 for 20 minutes. Don't flip.
You should end up with one side of the potatoes nicely browned.
I eat the whole pound!
