Coconut Cauliflower Curry

Serves 4

Ingredients:
Medium White onion, sliced so there are long pieces
One head cauliflower, cut into florets
1/3 cup of ginger/garlic blend (chopped fresh ginger and garlic)
4 T curry powder
2 14-oz cans of full-fat coconut milk
2 T turmeric
Salt to taste
Cube of bullion

Technique:
Saute onions in coconut oil for about 5 min
add the garlic and ginger, saute another 1 minute
add all the spices and the bullion cube and stir
add the cauliflower and the coconut milk and some salt
cover and simmer for 20 min or until the cauliflower is the texture that you like

Server as-is or over brown rice or quinoa.
