White Beans with Grilled Radicchio

You don't have to grill the radicchio. Serves 2. This is from Vegan Italiano with slight variation.

2 15-oz cans white beans
1 14.5-oz can of diced tomatoes
2 garlic cloves crushed and left whole
3 fresh sage leaves
1 sprig fresh rosemary
1 large bay leaf
Salt and Pepper to taste
2 small radicchio heads, halved

Place everything except radicchio in a pot and bring to a simmer just to warm it up and get the herbs to release flavor.

Preheat broiler, lightly grease a baking sheet. Brush each half with olive oil and salt and pepper. Broil until each half is lightly browned. Serve in a bowl covered with equal amounts of bean mixture. Serves 2.
