Quinoa Salad

You can put just about anything in this Quinoa Salad. Add/omit based on your preferences. Increase/decrease amounts based on your preferences.

1 Cup Quinoa (uncooked)
2 garlic cloves, minced
1/4 C chopped scallions
1/2 C Celery chopped
1 Red Pepper chopped
1 Green Pepper chopped
1 tsp cumin
1 tsp coriander
1 can corn (maybe not the whole thing)
Chopped Cilantro to taste (I use a lot)
1 Cup Currants (or you might try raisins)

Dressing:
2 T Fresh Squeezed Lime Juice
1/4 C EVOO
1 tsp salt
pinch cayenne

Soak the quinoa for 15 minutes and then drain, or just run water over it to rinse it. Takes our any bitterness.

Boil 2 cups water, add the 1 cup soaked quinoa, turn down to a simmer, and cook it like rice for 15-20 minutes. Let this cool off.

Then toss it all together and refrigerate it for a few hours. Or you could just eat it right away, but flavors tend to mingle nicely if you let them sit together for a while in the fridge.
